How to Fill a Cake

Four Methods:

There are many ways to fill a cake, from jam and syrup to more complex fillings made from scratch.

Ingredients

Buttercream filling:

  • 100g /3½ oz butter
  • 140g/5oz icing sugar
  • 60g/2oz cocoa powder
  • A splash of brandy or rum (or use juice or syrup if you'd prefer)
  • Caster/superfine sugar for, dusting
  • Cocoa powder, for sifting

Steps

In each case it is assumed that you already have baked or purchased the cake for filling and that it has been cut in half, for the filling to be added to the base half.

Filling with jam

This is very simple but since it's so tasty, it's one that is frequently resorted to.

  1. Add jam straight from the jar.Choose a jam that complements the flavor of the cake. Simply spread enough of the jam across the base half of the cake from the edges to the middle, or in a circular fashion.
  2. Add gently warmed jam.For jam that is chunkier, warming it will help it spread more easily. This is especially good for a jam like apricot jam. Add the amount needed to a small saucepan. Gently heat for a few minutes, stirring to help break down the jam a little. Then remove from the heat and spread across the base half of the cake until covered.
  3. Place the top layer on the cake.Frost or ice the cake if you're doing so.

Filling with syrup

  1. Select a suitable syrup.When using syrup, the expectation is that it will cover the base half but it will also seep into the cake, so it must be a flavor that matches well with the cake and the cake texture must be such that it will take well to being soaked, such as a sponge cake or a cake with a slightly dry texture that could do with having moisture added.
    • Syrups to use might include: chocolate syrup, strawberry syrup, maple syrup, golden syrup, buttery syrup, etc.
  2. Drizzle the syrup across the base half as evenly as possible.Cover as much of the base half as possible but don't go right to the edge in case the syrup spills over the side and looks unsightly.
    • It is also okay to poke a hole in the top half of the cake and to drizzle some syrup into the top half via the hole (or holes). This would be done where you want both halves of the cake to be well infused with the flavor or where you're trying to rescue an overly dry cake.
  3. Place the top layer on.Frost or ice the rest of the cake if you're doing so.

Buttercream filling

  1. Use the ingredients outlined above.
  2. Beat the butter in a mixing bowl until smooth.
  3. Gradually beat in the icing, sugar, and cocoa powder.
  4. Add the brandy and mix well.
  5. Spread or pipe over the cake base until filled.
  6. Place the top layer on.Frost or ice the rest of the cake if you're doing so.
